摘要
综述产保健油脂真菌的种类、真菌保健油脂的成分、多不饱和脂肪酸的生理功能和生物体内多不饱和脂肪酸的合成、影响真菌保健油脂生产的因素、真菌保健油脂的下游制取工艺并对其应用前景进行展望。
The genera of fungi related, elements analysis of hygienical oil, physiological thnctions of poly-unsaturated fatty acids, metabolism principle of PUFAs synthesis in vivo,influencing factors during fermentation, separation and purification processes of hygienical oil together with application prospects are reviewed.
