摘要
[目的]促进沙棘资源的深度加工利用。[方法]采用国标分析方法对内蒙沙棘果汁中的主要营养成分进行分析测定。[结果]结果表明,沙棘果汁中含总糖3.90%、总酸1.80%、粗纤维0.05%、蛋白质0.60%、灰分0.30%、脂肪0.30%、Vc 358 mg/100 ml和游离氨基酸116.0 mg/100 ml,其中检测到一种具有保健功能的特殊氨基酸——γ-氨基丁酸(GABA),含量为13.4 mg/100 ml,占游离氨基酸总量的11.6%。[结论]沙棘果汁中营养成分丰富,具有很高的开发利用价值。
[ Objective ] The purpose was to improve utilization and further processing of Sea buckthorn fruit resources. [ Method] The main nutritional components of Sea buckthorn fruit juice in Inner Mongolia area were analyzed according to national standard methods. [ Result] The results indicated that the content of the total sugar, total acid, crude fibre, protein, ash, fat and Vc in fruit juice were 3.90%, 1.80%, 0. 05%, 0. 60%, 0.30% , 0.30% , 358 mg/100 ml, respectively. And free amino acids content was 116.0 rag/100 ml, including one functional amino acid of γ-amino butyric acid (GABA) which content was 13.4 mg/100 ml and was up to 11.6% of total free amino acids and. [ Conclusion] Sea buckthorn fruit juice is rich in nutritional components and could be of high value in utilization.
