摘要
研究了光照强度对干辣椒果实中辣椒素、维生素C和可溶性糖含量的影响。结果表明:随光照强度的降低,辣椒素含量呈先增后减的趋势,果肉中的辣椒素含量在光强85%时出现高峰,而胎座中的辣椒素含量在光强70%是达最大值,而维生素C和可溶性糖的含量均呈下降趋势。
The effect of light intensity on the content of capsaicin, Vc and soluble sugar in pepper fruits were studied.Rusults showed that the content of capsaicin under 85% light intensity turned out to be the most optimum in pericarp,and the content of capsaicin under 70% light intensity turned out to be the most optimum in placenta of pepper fruits,while the content of Vc and soluble sugar showed decreasing tendency companied with decreasing light intensity.
