摘要
葡萄籽油富含不饱和脂肪酸,特别是亚油酸含量高达75.8%,为防葡萄籽油氧化,以多孔淀粉为壁材,在单因素试验基础上,采用二次通用旋转组合试验,对葡萄籽油微胶囊化工艺条件进行研究,建立微胶囊化回归数学模型,并对产品进行氧化试验。结果表明,多孔淀粉包埋葡萄籽油微胶囊化技术工艺条件为,芯材与壁材比率2.9∶1、包埋时间58min、包埋温度50℃,包埋率为30.31%,产品抗氧化性良好。
Grape seed oil has higher content of unsaturated fatty acid, which, specially, contains more than75.8% linoleic acid. For avoiding oxidation of the oil, we used porous starch as the wall material, on the basis of the single factor experiment, by the experimental method of quadratic general rotary design, the microencapsulation parameters were studied, we obtained a mathemetic model of microencapsulation, also carried out the grape seed oil by oxidation experiment. The result showed that, the proportion of grape seed oil to wall materials was 2.9:1, the time of microencapsulation was 58min, the temperature of microencapsulation was 58℃. Under the optimal condition, the rate of grape seed oil embeded by porous starch was 30.31%, meanwhile, the microencapsulation in good antioxidation.
