摘要 以豆渣为原料,在120℃加压预处理1.5 h条件下,采用碳酸钠溶液提取,滤液用4倍体积乙醇沉淀的方法提取可溶性膳食纤维(SDF),通过单因素实验和正交实验确定了碳酸钠溶液提取的最佳条件。研究结果表明,用质量分数为4%的碳酸钠溶液调节料液pH至12,在90℃提取1.5 h,豆渣中SDF提取率可达44.3%。 The soybean dregs was pretreated in high pressure for 1.5 h at 120 ℃, then extracted with sodium carbonate solution and precipitated with alcohol to prepare soluble dietary fibre(SDF). By single factor and orthogonal test, the optimal conditions of extraction with sodium carbonate solution were determined. The results showed that the extraction rate of SDF reached 44.3% when 4% sodium carbonate solution( mass fraction) was used to adjust the pH of raw liquid to be 12,then the liquid was extracted for 1.5 h at 90℃.
