摘要
用活性炭对文庆鲤酶解液脱苦处理后其ACE抑制活性降低,用8%粉末状活性炭处理3h后,酶解液ACE抑制率下降19.76%。粉末状活性炭处理后酶解液的OD220和OD280值下降显著,说明粉末状活性炭对酶解液中的氨基酸及肽类有较强的吸附性,这也是导致酶解液ACE抑制率大幅下降的原因。实验结果证明,用活性炭对酶解液进行脱苦处理既改善其呈味性能,又保持较高的ACE抑制活性是不现实的。
ACE inhibitory activity was decreased after Wenqing carp enzymatic hydrolysate was debitterized by activated carbon.Treating the hydrolysate for 3h with 8% powdered activated carbon,ACE inhibition rate reduced 19.76%.OD220 and QD280 value of the hydrolysate dropped significantly after treating with powdered activated carbon,it indicated that powdered activated carbon adsorbed amino acids and peptides strongly and this resulted in remarkable decrease of ACE inhibition rate, Experimental results showed that debittering the hydrolysate with activated carbon to both improve its fiavour development performance and maintain relatively high ACE inhibitory activity was not realistic.
