摘要
以奶粉、豆粉为基料,在添加羊骨胶原多肽的同时,适当添加各种蔬菜粉、燕麦粉及其他辅料,生产儿童专用型羊骨胶原多肽速溶粉。以单因素试验和正交试验为主要研究方法筛选最优配方。结果表明:儿童型羊骨胶原多肽速溶粉的配方I(按100 g产品计算)为:17.58 g豆粉+9.48 g奶粉+5.40 g胡萝卜粉+2.70 g菠菜粉+2.70 g南瓜粉+8.10 g山楂粉+6.50 g白砂糖+7.50 g羊骨胶原多肽+41.10 g燕麦粉。配方II(按100 g产品计算)为:27.18 g豆粉+14.63 g奶粉+8.38 g胡萝卜粉+4.18 g菠菜粉+4.18 g南瓜粉+0.33 g木糖醇+0.18 g柠檬酸+7.50 g羊骨胶原多肽+33.45 g燕麦粉。经检测,配方I、II中钙(mg/(100 g))含量分别为1 044.5和1 929.8。
The formula of instant powder with sheep bone collagen polypeptides for children was studied. Several powdered vegetables and oat flour were added into the powdered milk and pulse flour too. The single factor experiments and orthogonal test were conducted to screen the optimal formula. The results show that the formula I (each 100 g products) includes pulse flour17.58 g, powdered milk 9.48 g, powdered carrot 5.40 g, powdered spinach 2.70 g, powdered pumpkin 2.70 g, powdered hawthorn 8.10 g, white granulated sugar 6.50 g, sheep bone collagen polypeptides 7.50 g and oat flour 41.10 g, and the formula Ⅱ (each 100 g products) includes pulse flour 27.18 g, powdered milk 14.63 g, powdered carrot 8.38 g, powdered spinach 4.18 g, powdered pumpkin 4.18 g, xylitol 0.33 g, citric acid 0.18 g, sheep bone collagen polypeptides 7.50 g and oat flour 33.45 g. By the detection, the contents of calcium were 1 044.5 mg/ (100 g) in formula Ⅰ and 1 929.8 mg/ (100 g) in formula Ⅱ, respectively.
