摘要 采用蜂蜜、大香水梨、牛奶、生姜为原料,运用科学合理的加工工艺,通过正交试验和感官评定的方法,研制出了口味独特、富有营养和多种保健功能的姜味蜂蜜梨汁果奶饮品。该产品特点是采用蜂蜜生姜汁的混合液(10∶1)取代蔗精作甜味剂,通过正交试验筛选出最佳配方为鲜牛奶8%,梨汁10%,甜昧剂15%,柠檬酸0.4%,稳定剂0.4%,乳化剂0.6%,成品质量稳定。 In this paper, honey, perfume pears, milk and ginger were used as raw material. With the scientific and rational processing technology, through orthogonal test and sensory evaluation, we developed milk beverage with a unique taste, nutrition and the variety health of functions. In the fruit milk, Ginger-Juice Honey (10:1) were selected to act as the sweetener replacing the sucrose. The optimal formulation of the product was deter mined by orthogonal test: 8% milk, 10% pear juice, 15% sweetener, 0.4% acid, 0.4% stabilizer and 0.6% emulsifiers. The product quality was stable.
