不同地理种群栉孔扇贝营养成分的比较分析 被引量:22

摘要 [目的]分析和评价辽宁、山东、江苏、广东4个不同地理种群栉孔扇贝的营养成分。[方法]用常规方法分析其软体部一般营养成分 用氨基酸分析仪分析氨基酸组成。[结果]蛋白质含量以山东种群最高 粗脂肪和灰分以辽宁种群最高 水分含量以广东种群最高。氨基酸的组成非常全面,各地理种群栉孔扇贝干物质中氨基酸总量由大到小的变化顺序为山东(761.9 mg/g)〉广东(755.6 mg/g)〉江苏(752.1 mg/g)〉辽宁(741.1 mg/g) EAA/TAA比率在36.15%~37.64% 呈味氨基酸的含量较高,变化范围为306.9~312.6 mg/g。钾、磷、钙、镁、铁等元素的含量丰富。[结论]不同地理种群的栉孔扇贝一般营养成分、氨基酸及矿物元素含量虽存在一定差异,但与其他一些双壳贝类相比,栉孔扇贝是高蛋白、氨基酸和矿物元素含量较丰富的海洋食品。 [Objective] The research aimed to analyze and evaluate the nutrients of Chlamys farreri collected from Liaoning,Shandong,Jiangsu and Guangdong provinces.[Method] The main nutrients were determined with routine methods.Amino acid compositions were determined with amino acid analyzer.[Result] The protein contents in Shandong population in dry weight 124.1 mg/g were higher than that in other populations.There were the maximal contents of crude fat 46.3 mg/g and ash 27.4 mg/g in dr), weight in Liaoning population. The moisture contents in dry weight were higher in Guangdong population 824.6 mg/g than in other populations. All kinds of amino acids were found in Odamysfarreri. The total levels of amino acids in various populations were arranged in a descending order as the following: Shandong (761.9 mg/g) 〉 Guangdong (755.6 mg/g) 〉 Jiangsu (752.1 mg/g) 〉 Liaoning (741.1 mg/g). The ratio of FAA/TAA varied from 36.15% - 37.64%. The contents of essential amino acids varied from 306.9 - 312.6 mg/g. The content of potsssium,phosphoms, calcium, magnesium, iron,etc, were rich. [Conclusion] The contests of nutrients, amino acids and mineral elements were different in soft bodies of Chlamys farrer/from four provinces,however, Comparing with other marine bivalves, Chlangs farreri is a seafood with higher protein, amino acids and mineral elements, and is good for health.
