摘要
目的:对不同饲喂条件下乌骨鸡肉的食用品质及血清生化指标进行了检测分析,确定枸杞园生态放养乌骨鸡肉品质优于对照组。方法:本研究采用放射免疫计数器、全自动生化分析仪等仪器设备对不同饲喂条件下乌骨鸡肉和血液指标进行了较为全面的检测。结果:枸杞园放养乌骨鸡肉食用品质指标中,剪切力、肌纤维直径显著低于对照组(P<0.05),系水力显著高于对照组(P<0.05)。另外,在血清生化指标中,葡萄糖、肌酸激酶极显著低于对照组(P<0.01),雌二醇、睾酮显著高于对照组(P<0.05)。结论:通过对枸杞园放养乌骨鸡肉及血液相关指标的检测分析,可知枸杞园放养乌骨鸡肉质细嫩,保水性好,具有良好的加工性能。
Objective:This study was designed to determine and analyze quality of meat and the indexes of serum biochemical in silky under different fed condition, it was shown that the meat quality of the silky on fed medlar was superior to control group.Methods:The silky were fed in different conditions ,the indexes of meat quality and serum biochemistry were determined by radioimmunoassay counter and automatic biochemistry analyzer etc.Results:ln the indexes of meat quality of silky on fed medlar, tenderness shearing force and the muscle fiber diameter were lower than the control group ( P 〈 0.05), and the water power was higher than control group( P 〈 0.05 ).Otherwise, in the indexes of serum biochemistry, glusose and creatine kinase were lower than the control group ( P 〈 0.01 ), estradiol and testosterone were higher than the control group (P 〈 0.05).Conclusion:The results showed that the meat of the silky on fed medlar was tender and better quality of processed.
