摘要
利用蛹虫草液体发酵菌丝体及发酵液研制功能性面包,经单因素试验和感官评定,确定虫草面包中虫草发酵液的最佳添加量为:900g面粉中添加30mL发酵液。经测定,虫草面包中含有丰富的虫草多糖。
Cordyceps militaris can produce a variety of biological active substances, which the highest concentration of biological material is polysaccharide. The submerged fermentation liquid and mycelium both contain polysaccharide. Mycelium polysaccharide can be used for the research of the functional food. The single test result showed that the best volume of fermentation liquid in the research of bread is 3.33 mL in 100 g flour. Through physical-chemical testing indicators of the bread contain rich of polysacchadde. Health indicators testing showed that the bread is consistent with national health standards. They are ideal and health functional food.
