利用16S~23S rDNA间隔序列对葡萄酒中的酒酒球菌的鉴定 被引量:1

Identification of Oenococcus oeni in Grape Wine by Use of 16S~23S rDNA Ribosomal-Spacer-Region

摘要 对从宁夏银川地区自然发酵的葡萄酒中分离得到30株菌株,并对菌株进行分子鉴定、生理生化鉴定和酿酒适应性的筛选。从中优选出4株菌株,对筛选出的4株菌株分别进行了PCR扩增,得到它们的16S~23SrDNAITS片段,并测定所得到片段的DNA序列。将测定结果与GenBankDNA数据库已知的菌种对比,确定4株菌株均为酒酒球菌。 30 strains were collected from the grape wine made in Yinchuan, Ningxia by natural fermentation. Then 4 strains were screened among them by molecular identification, biochemical identification, and wine-making adaptability screening. Then the 16S-23S rDNA ITS fragments of the 4 strains were obtained after they were amplified by PCR. And the DNA sequence of the obtained fragments were determined and the determinatoin results were compared with the known strains in GenBank DNA database. The 4 strains finally were identified as Oenococcus oeni.
