摘要 由于益生菌对人体健康的重要作用,目前越来越受人们重视,益生菌产品也迅速增多。文章对益生菌的种类及保健作用做了系统阐述,介绍了益生菌的六大作用,包括抑制腐败菌、提高免疫力、抑制肿瘤产生、延缓机体衰老、预防心血管疾病以及营养作用;介绍了益生菌酸奶和益生菌干酪制品,对其发展前景及未来的研究方向进行了展望。 At present, more and more people paid attention to probiotics because of its important function on human health. The probiotic products increased rapidly recently. In the paper, the types ofprobiotic and its health care function were described, including inhibiting growth of spoilage organisms, enhance immunity, inhibit tumor arising, anti-aging, improve blood lipids and nutrition function. Probiotics dairy products such as yogurt and cheese were introduced. Probiotic products and the future research direction were prospected.
