摘要
对海带保健饮品的制作工艺进行了实验研究。海带经过护色、脱腥预处理后,再经过打浆、离心得到海带汁,海带汁中添加含量为0·1%的黄原胶和0·1%CMC-Na作为稳定剂,并加入10%的木糖醇、0·5%β-糊精、0·4%柠檬酸和0·008%香兰素进行口味调配,最后经过均质、灭菌、包装,就可制得营养丰富、清凉适口的海带保健饮品。
The producing process of kelp beverage was studied in this article. After pre-treatement of color keeping, deodourizating, slurrying and centrifuging, kelp juice was obtained, and it was stabilized by 0.1 % xanthan gum and 0.1% CMC- Na and flavor regulated by 10% xylitol,0.5% p-dextrine,0.4% citric acid and 0.008% vanillin.At last, a kind of healthy kelp beverage, which was rich nutrient, cool and dainty, was produced after homogenization, sterilization, and packing.
