摘要
通过单因素试验和正交试验确定了酵母菌富铁培养的最佳条件为:Fe2+添加浓度为100mg/L、接种量10%、培养时间为60h,pH值为6.0。对所富集铁形态的初步分析表明有机铁含量为68.5%,并将富铁酵母菌以3.0%的添加量应用于面包生产中,效果较好。
The optimal culture conditions of iron-rich yeast was obtained by orthogonal test and single fact test as follows: 100mg/L Fe^2+, 10% inoculum, culture time 60h and pH 6.0.
