摘要
目的青岛市在奥帆赛食品安全保障工作中启动了奥帆赛食品供应和食品安全追溯体系。本文从卫生学角度对该体系实施效果进行科学分析、评价。方法比较采用传统食品安全保障模式的奥帆赛第一次测试赛(即2006年国际帆船赛)与启用奥帆赛食品供应和安全追溯体系的奥帆赛第二次测试赛(即2007年国际帆船赛)食品和食品原料合格率,启用奥帆赛食品供应和安全追溯体系的奥帆赛第二次测试赛和2008年奥帆赛食品和食品原料合格率。结果第一次测试赛和第二次测试赛食品和食品原料合格率差异有显著性(χ2=4.06~8.66,P〈0.05),第二次测试赛和2008年奥帆赛食品和食品原料合格率差异无显著性(P〉0.05)。结论该体系采用全程监控、分段监管、逐级追溯的保障模式,有效提高了食品和食品原料的合格率,提高了奥帆赛期间运动员及各类客户群食品安全性。食品安全追溯体系在我市的推广实施对类似重大活动食品供应和安全保障工作具有重要意义。
Objective During Olympic sailing was holding in Qingdao, the food supply and traceability system (FSTS) implemented. The present study was to analyze and evaluate the results of the enforcement of the system from the angle of hygiology. Methods A comparison was made in terms of the food and its raw-material eligible rates between adopting traditional food safety pattern of the first (i. e. 2006 international regatta) and the second trail match FSTS (i. e. 2007 international regatta); as well as between the second trail match and 2008 regatta. Results The differences of food and its raw-material eligibility between the first and second trail match was dramatically (χ2 =4.06-8.66 ,P〈0.05) ; that between the second trail match and 2008 Olympic sailing was not significant (P〉0.05). Conclusion The FSTS adopts the measures of whole-course quality control, sub section responsibilities and step-bystep traceability, which effectively improves the quality and safety of food and its raw materials. The generalization of FSTS is of great significance in Qingdao sailing and will be in similar grand activities as well.
