摘要 脂肪酸值作为衡量稻谷新陈程度的一项重要指标,在稻谷的储藏和加工中都十分重要。而水分又是稻谷在储藏期间最重要的品质指标之一,同时也对脂肪酸值有着直接的影响。通过跟踪检测稻谷在储藏期间水分和脂肪酸值的变化情况,研究外因(温度、湿度)对稻谷品质变化规律的影响,对延缓粮食品质劣变,延长粮食的保质期,具有重要的指导意义。 Fatty acid value was an important index for measuring and evaluating fresh & stale degree of grain during paddy storage and processing. Meanwhile, moisture content was one of the most important quality indexes during paddy storage, it also played a direct influence on fatty acid value. By tracking and detec- ting the change status of stored paddy moisture and fatty acid value, the influence of such extrinsic factors as temperature and humidity on the change law of paddy quality was investegated. It was no--doubt that it had directive significance for postponing grain quality deterioration and prolonging grain shelf life.
