摘要
采用玉米蛋白粉作为原料代替部分豆粕来生产酱油。在实验中采用各种方法对其生产工艺进行了研究,确定出原料配比及保温发酵温度。
In the article, corn gluten meal is the main raw material, it was made of soy sauce, soy sauce's production process was studied by a variety of experiments. The ratio of raw materials and the fermentation temperature can be determined through some methods.
