摘要
主要从分析乳品供应链每一环节的质量安全风险影响因素出发,采用分层模糊评价法对影响指标进行比较,评判乳品供应链的质量安全风险,并以此为依据提出乳品供应链的质量安全控制策略。乳品供应链的质量安全控制需要建立针对整条供应链的HACCP体系,统一协调供应链中每个环节的关键质量控制点的标准。乳品供应链中各个参与者必须利益共享、风险共担,严格控制利用质量安全进行博弈,威胁乳品质量安全的行为。
Based on the analysis of the security risk factors in all segments of the dairy supply chain, this paper uses hierarchical fuzzy judging method(HFJ) to compare the impact of each safety risk factor. According to this evaluation, this paper puts forward some advice of controlling the quality safety risk of the dairy supply chain. We need to build up a HACCP system which includes the key points of the quality control all around the entire supply chain. The participants of the dairy supply chain need to harmonize and unify the standard of HACCP in each aspect. They should share not only the interests but also the responsibility on ensuring the quality of the diary. It needs strictly control the use of quality and safety to gamble, because the gamble brings a serious threat to the quality and safety of dairy products.
