Development of Physical and Chemical Testing Method for Food During Thirty Years of Reform and Opening-up in China

摘要 为了解改革开放30年食品理化检测方法的发展概况,介绍了参与国际间交流和互联网的普及对理化检验人员的影响,以及食品理化检验方法标准的更新和加强实验室管理的必要性。从样品前处理、仪器设备的角度探讨了理化检测方法的变化,分析了免疫和分子生物学技术在食品理化分析中的应用。虽然与发达国家相比我国的食品理化检测方面还存在一定的差距,但通过我国食品检测机构不断地调整和修正发展的方向,势必会赶上或达到国际同类先进水平。 To understand the development of physical and chemical testing method for food during 30 years of reform andopening-up in China, the impact of international communication and the popularity of Internet on our physical and chemical inspection personnel, the renewal of standard physical and chemical testing methods, and the necessity of strengthening laboratory management were introduced. The changes of physical and chemical testing method from the aspects of sample pretreatment and instrument equipping were discussed. The application of immune and molecular biology technique in food physical and chemical testing methods was discussed. Although the gap of physical and chemical testing method between developed country and China still exist, the food testing institutions in China could improve and reach the international advanced level by adjusting and correcting their development direction.
