摘要
本文对库尔勒香梨在贮藏期间果实不同部位的多酚氧化酶(PPO)活性、总酚含量的分布及变化进行了研究。实验结果表明:PPO活性与总酚含量在果实不同部位具有相同的分布趋势,果皮最高,果心次之,果肉最低;PPO活性与总酚含量的变化存在正相关性。
The relationship between PPO activity and total phenols in threedifferent parts of Kuerle Sweet Pear during storage was studied. Theresults showed that both PPO activities and total phenols were highest inpeel medium in core and lowest in pulp,and that there was a positivecorrelation between PPO activities and total phenols.
