摘要
本研究从酸奶、泡菜中分离得到1株高产GABA的乳酸菌株,经生理生化实验鉴定为植物乳杆菌。利用HPLC法检测出该乳酸菌发酵产物中GABA含量达0.527g/L。
It was reported that γ-Aminobutyric acid (GABA) could reduce blood pressure. In this study, a GABA-producing strain, IA, was isolated from the milk samples and identified as Lactobacillus plantarum. The content of GABA in the fermentation mixture by this strain was 0.527 g/L measured by HPLC.
