追氮量对不同冬小麦籽粒蛋白质含量以及面粉加工品质的影响 被引量:8

摘要 为了研究不同追氮量对冬小麦籽粒蛋白质及其组分含量和面粉加工品质的影响,在大田条件下以4个冬小麦品种为材料,设置了三个不同追氮量处理,分析了不同追氮处理下冬小麦籽粒蛋白质含量和加工品质参数。结果表明,在0—240kg/hm2追氮范围内,总蛋白及其组分含量随追氮量的增加而提高,总蛋白和谷蛋白含量与追氮量呈显著正相关(r=0.998*,0.999*)。在一定范围内,增加追氮量有利于改善小麦的主要加工品质,与对照相比干湿面筋含量、稳定时间等加工品质指标均显著提高,沉降值和面包体积有所提高,但差异不显著。小麦面粉加工品质在不同品种间差异显著。 In order to study the effect of different top-dress nitrogen application amount on protein content and its components and flour processing quality in winter wheat, a field experiment using four winter wheat cultivars with three different top-dress nitrogen treatments (B1, only base nitrogen application 120 kg/ha; B2, base nitrogen 120 kg/ha and top-dress nitrogen 120 kg/ha; B3, base nitrogen 120 kg/ha and top-dress nitrogen 240 kg/ha) was conducted in Beijing experiment site of the Institute of Crop Sciences, Chinese Academy of Agricultural Sciences in 2007 - 2008 growth sea- son. The result showed that the total protein and its components were increased with the top-dress nitrogen from 0 to 240 kg/ha, especially,the total protein and glutelin content had a significant (P 〈 0.05) positive correlation with top-dress nitrogen application amount(r = 0.998 * ,0.999* ). By top-dress nitrogen treatments, the main characteristics of process- ing quality were improved with increasing the applied nitrogen within a certain range. Comparing with no top-dress nitro- gen treatment, many important quality characteristics of dry and wet glutelin content, stability time and so on were signifi- cantly improve with nitrogen treatments. However there were some significant differences among cuhivars.
