摘要
为了研究电流体动力学干燥技术中工艺参数对干燥速度与能耗的影响,以优化干燥工艺及提高干燥效率,将豆腐作为试品置入多针—板电极所构成的电流体动力学干燥装置中,实验研究电源电压、上下电极间距、针间距等工艺参数对电流体动力学干燥速度与能耗的影响。实验结果表明:干燥电压与干燥速度线性正相关;干燥能耗与工作电压也具有一定的正相关性,但并非线性关系;上下电极间距和针间距都对干燥速度和能耗有一定影响,且都存在一最佳的间距,由之得出结论:在上下电极间距为9cm,针间距为8cm、工作电压为45kV时,干燥速度最大且干燥能耗相对最小。
In order to improve the drying technique and the drying efficiency of electrohydrodynamic (EHD) drying, and to reduce the energy consumption, the effects of operating parameters on the drying rate and energy consump- tion were investigated. Tofu contained in the petri dish was put in EHD system which was made up of a multiple point pole and a plate pole. By changing the voltage, the electrode spacing and the distance between the two neigh- boring needles, the factors related to the drying rate and energy consumption were quantitatively studied. The re- suits indicate that when the distance between the needle electrodes and the surface of the plate pole is constant, the drying rate increases linearly, while the drying energy consumption increases nonlinearly with the supplied voltage. When the supplied voltage is not changed, the tofu drying rate and energy consumption are changed with the dis- tance between the two neighboring needles. When the distance between the two neighboring needles is not changed, the tofu drying rate and energy consumption are changed with the electrode spacing. When the electrode spacing is 9 cm and the distance between the two neighboring needles is 8 cm, the drying rate is the highest, while the energy consumption is relative least, 45 kV is the optimum value for drying voltage.
