摘要
采用现代生物技术、超微粉碎技术结合其他先进工艺生产的特制玉米粉,可以作为玉米食品的基础原料,与小麦粉具有相似的食品加工特性。对特制玉米粉的营养特性、生产原理和生产工艺进行了较为详细的阐述。
The modified maize flour processed by modem biological technology, uhrafine milling technology and other advanced craft can be used as raw material to make food, which has the similar characteristics with wheat flour. The nutrition property, the production principle and the technique of production of modified maize flour are expatiated.
