摘要
在公认的生化抗氧化剂中,目前还未明确地列入5-甲基四氢叶酸.根据5-甲基四氢叶酸的化学结构,它应该具有强氧化性从而能够有效地保护其它维生素的光降解.本文据此研究了5-甲基四氢叶酸的抗氧化效应.选择光敏感维生素核黄素作为光降解剂.使用荧光光谱仪记录和分析了核黄素分别在叶酸和公认的抗氧化剂维生素C作用下的光降解光谱,以此比较分析它们的抗氧化效应.结果发现,当5-甲基四氢叶酸加入时,核黄素光降解明显变慢,而维生素C的作用不如5-甲基四氢叶酸明显.数据显示,5-甲基四氢叶酸具有明显的抗氧化效应,而且其抗氧化效应较维生素C强.
Implied from the chemical structure of 5-methyltetrahydrofolate,it might have a strong antioxidant activity to protect other vitamins against photodegradation.To investigated this possible antioxidant effect,photosensitizing vitamin riboflavin was selected as the degradation agent.The absorption spectra of riboflavin alone was compared with those of in the presence 5-methyltetrahydrofolate or ascorbic acid,a well known antioxidant vitamin.We found that 5-methyltetrahydrofolate decreased the degradation of riboflavin more significantly than ascorbic acid according to the analyses of absorption spectra. We concluded that 5- methyhetrahydrofolate had a stronger antioxidant effect than ascorbic acid.
