摘要
以紫山芋为特色原料制作营养价值丰富并且色泽、口味、质感俱佳的冰淇淋。经研究得到的最佳工艺条件为:紫山芋泥15%,卡拉胶(К型)0.04%,鲜奶油12%,牛奶40%,糖15%,老化温度1~4℃,老化时间为6h。
Nutritious and delicious ice cream with pleasing color and even texture was prepared in this research. The result showed that the best process conditions was purple ipomoea batatas butter 15%, carrageenan 0.04%, fresh cream 12%, milk 40%, sugar 15%, maturing tempreture 1-4℃, maturing time 6 h.
