摘要
用火焰原子吸收分光光度法对陕南的8种药食两用菌的7种微量元素进行了测定。结果表明,药食两用菌中含有人体所必需的Fe、Ca、Mg、Zn、Cu、Mn、K 7种微量元素,其中Ca、Fe、Cu、Mn的含量比较高。药食两用菌类富含对人体有益的微量元素,有较高营养价值。
Seven trace elements in eight kinds of edible and medicinal fungi produced in South Shaanxi by flame atomic absorption spectrophotometry were measured. Results showed that seven trace elements （ Fe, Ca, Mg, Zn, Cu, Mn, K ） necessary to human body were contained in edible and medicinal fungi, and contents of Ca, Fe, Cu, and Mn were relatively high. Edible and medicinal fungi are rich in trace elements which are health to human body, and have higher nutritional value.
