糠硫醇是天然咖啡的一种有效成份,可作为人造咖啡的芳香剂。它可在酸性条件下由糠醇和等克分子量的硫脲反应先生成糠基异硫脲,然后再加氢氧化钠水溶液而制得。
Furfuryl mercaptan is a major component in roast coffee aroma or an aromatic ingredient for artifical coffee. It can be preparated by reaction of 2-furfuryl alcohol with equimolar amounts of thiourea in acid medium to give furfuryl isothiourea, and then addition of sodium hydroxide aqueous solution. The reaction mechanism is discussed.
