摘要
利用双突跃电位滴定法和黏度法分别测出几种壳聚糖的脱乙酰度及分子质量,从中选择脱乙酰度最高的壳聚糖,并以此为原料,利用壳聚糖与葡萄糖在乙醇溶液中进行羰氨反应(美拉德反应),制备水溶性壳聚糖。研究了水溶性壳聚糖制备工艺条件,考察了乙醇体积分数和反应温度对壳聚糖羰氨反应的影响,确定了最佳降解条件为:反应温度50℃,反应时间12h,乙醇体积分数为33%。
Several Chitosan deacetylation and the molecular weight were measured by double-jump potentiometric titration and viscosity method. The highest degree of deacetylation of chitin was selected and to prepare water-soluble chitosan by Maillard reaction with glucose in ethanol solution. The paper studied the process, especially the ethanol concentration effects and reaction temperature. The best condition was 50 ℃, reacted for 12 h with 33% of the ethanol.
