天水四门醋文化源远流长,从历史记载到传说,从传统技术到现代工艺,从四门水质到四门醋品味,在中国的酿造史上和醋文化方面具有重要的影响。本文报道了天水四门贡醋的形成历史、特色品质形成的原因、四门镇酿醋之规模、当地人从古到今对贡醋需求的状况.
Tianshui Simen vinegar culture goes back to ancient times. Simen vinegar playes an important role in brewing history of China and in vinegar culture,from the historical records to the legend, from the traditional technology to modem technology, from the Simen water to the Simen vinegar taste .This paper reported Tianshui Simen vinegar history, the reasons of the formating quality characteristics, the size of the vinegar brewing in the town, the situation of vinegar demand of the local people since ancient times.
