摘要
采用辐照技术处理可以延长食品货架期和冷藏贮藏期,提高卫生质量,改善食品的营养及工艺性质。随着辐照技术的成熟完善和研究工作的不断深入,在食品工业领域的发展应用将进一步拓宽。概述了辐照对食品中营养成分的影响。
Irradiation can prolong the storage time and shelf life,enhance the safety and quality and improve the nutrition and craftwork of foods.The irradiation technology will be applied to food industry rapidly with the mature of technology and the deepening of study.The effect of irradiation on nutrients in foods was summarized in this paper.
