镇江市区市售食品中食源性致病菌检测情况分析 被引量:8

Detection of Food-borne Pathogens from Market Food in Downtown Area of Zhenjiang

摘要 目的了解镇江市区市售食品中食源性致病菌污染情况。方法样品采集于镇江市区主要超市、农贸批发市场和餐饮单位,按照GB/T4789-2008《食品卫生微生物学检验》对样品中沙门菌、单核细胞增生李斯特菌、金黄色葡萄球菌、副溶血性弧菌、肠道出血性大肠杆菌(EHEC O157:H7)以及大肠菌群进行检测。结果检测食品样品104份,样品的不合格率为18.26%;受致病菌污染的主要是生畜肉、动物性水产品以及即食食品中的熟肉制品、中式凉拌菜、沙拉。结论应加强对市售食品尤其是生畜肉、动物性水产品以及即食食品的监管;还应引进快速检测方法,提高开展食源性致病菌预警的检测手段。 Objective To ana town area of Zhenjiang. Methods yze the contamination condition of food - borne pathogens from market food in the down- Food samples were selected from supermarkets, agricultural fairs and restaurants. Bacteria indexes including SalmoneUa enterie, Listeria monoeytogenes, Staphylococcus aureus, Vibrio parahaemolyticus, Escherichia colf O157 :H7, and coli group were determined according to the standard GB/T4789 - 2008. Results Totally 104 food samples were determined and the detection rate of pathogen was 18.26 %. The food- borne pathogens were mainly detected from raw meat, aquatic products, and ready- to- eat food, including cooked meat products, Chinese cold dish, and salad. Conclusions Supervision to market food, especially raw meat, aquatic products, ready- to- eat food, should be strengthened. Rapid determination methods for food borne pathogens could be used to improve the early warning ability.
