摘要
目前我国食用油脂掺假现象仍很常见,严重影响人民身体健康,是油脂食品安全问题重中之重。该文就油脂掺假现象从感官检验、定性检验和定量检验三个方面,对目前国内外油脂掺假检测方法进展进行综述。
At present, the phenomenon of adulteration in edible oils and fats has becoming the most important food safety issues cause it has seriously impacted people'.s health. This article reviews the detection methods of mixed different edible oils and fats by the sensory testing, qualitative and quantitative testing.
