摘要
作为天然抗氧化剂的抗氧化肽因安全、高效等特点而显示出在医药、食品和饲料行业的应用优势,现已成为国内外研究热点。文章综述了近年来酶法制备抗氧化肽及其构效关系的研究进展,重点阐述了抗氧化肽的分离纯化方法,初步探讨了抗氧化肽的构效关系,提出了抗氧化肽研究开发中存在的关键问题,以期为抗氧化活性肽的开发研究提供可借鉴的信息。
The antioxidant peptides, a kind of natural antioxidants, showed the superiority of application to medicine, food and feed. It have become the focus of oversea and domestic researchers because of its high safety and effective. In this review, the preparation and structure-activity relationship of the antioxidant peptides froru pro rein hydrolysates were summarized, the method of separation and purification were illuminated, structureactivity relationship was simply discussed, and the key problems in development arc previewed.
