许昌市食品食源性致病菌检测 被引量:1

摘要 目的:了解许昌市食品中食源性致病菌污染状况,确定可能污染致病菌的高危食品,为食源性致病菌检测提供科学依据。方法:按照GB/T4789-2003方法对病原菌进行鉴定。结果:共检测5类食品样品(生畜肉,生禽肉,动物性水产品,非发酵豆制品,速冻面食)共894份,检出致病菌100株,总检出率为11.2%。5类食品中致病菌阳性率最高的是生畜肉,阳性率为16.5%;生禽肉,动物性水产品,非发酵豆制品,速冻面食的阳性率依次为11.0%,13.5%,6.3%,5.2%。结论:许昌市5类食品存在不同程度食源性致病菌污染,其中生肉和水产品是主要污染食品品种;生肉污染菌以沙门菌为主,水产品污染菌以副溶血性弧菌为主。卫生监督执法部门应重点监测这类食品,减少和避免许昌市食源性疾病的发生。 Objective:To find out the pathogenic bacteria pollution status of the food in Xuchang and ascertain the high-risk types of food which can be easily polluted.So we can build the scientific foundation for the test of the pathogenic bacteria.Methods:Appraise the pathogenic bacteria according to GB/T4789-2003.Results:Five categories of food samples have been tested(livestock meats,poultry meats,aquatic products,unleavened bean products and fast frozen wheaten food),100 proportions of pathogenic bacteria were founded in 894 shares of samples and the general detected ratio is 11.2%.The highest positive rate of the pathogenic bacteria has been proven exists in livestock meats and its positive rate is 16.5%.According to priority,the positive rate of poultry meats,aquatic products,unleavened bean products and fast frozen wheaten food is 11.0%,13.5%,6.3%,5.2%.Conclusion:There are varying degrees of the pathogenic bacteria pollution in all the five categories of samples from Xuchang.Among them,meat and aquatic products are the main contaminated food products Species Salmonella mainly exists in meats and Vibrio Parahaemolyticus occurs in the aquatic products mostly.All these types of food products should be paid special attention by the law-enforcing departments and supervisory institutions of the health.Try to reduce and avoid any disease caused by food pollution.
