摘要
对脂类催化氧化作了全面、深入的研究。指出光敏性物质的存在是光氧化发生的直接因素,第一类光敏物可将底物活化成自由基,第二类光敏物诱发的反应为单线态氧和底物的协同反应,其氢过氧化产物不同于自动氧化的产物;脂氧酶能有选择性的催化多不饱和脂肪酸,且具有专一性,来自不同植物中的脂氧酶催化反应的产物也不同;金属催化的本质是自由基反应,过渡金属因其价态发生变化及其无处不有的特点,在脂类的催化氧化反应中,发挥着极其重要的作用,尤其三价铁是很强的自由基诱发剂。光氧化。
Catalytic oxidation of lipids is studied comprehensively and deeply. The existence of photosensitisers is the derect factor that bring out photoxidation reaction. The sensitiser 1 can activate substrates to free radical, the reaction induced by the sensitiser 2 is concert reaction by singlelet oxygen and substrates, the products are different from the hydroperoxides yielding by autoxidation;lipoxygenase may selectively catalyze unsaturated fatty acids, besides, it has speciality, reactions catalyzed by liposygenase from different plants yield different substances; the nature of metal catalysis is free radical reaction, transitional metals have various valences and are ubiquitous, so they play an extremely important role in catalyzing lipid oxidation,especially the Fe 3+ is a very strong free radical inducer.
