对抗性淀粉的研究进展作了综述,重点介绍了抗性淀粉的特性、定量方法和膳食功能,便于认识其与膳食纤维的许多不同之处。
The development in research of the resistant starch was expounded. The characteristics,quantitative method and dietary functions of the resistant starch were introduced emphatically for the convenience of understanding the differences between the dietary fibre and resistant starch.
