食品分析中毛细管电泳-质谱联用技术方法研究进展

摘要 本文综述了近年来毛细管电泳-质谱联用技术在食品分析中的应用,这些应用包括食品中氨基酸、多肽和蛋白质、多酚、毒素、污染物质和其它外源性物质等的测定,并对这一技术的发展前景做出展望。 The applications of capillary electrophoresis-mass spectrometry technology in food analysis are reviewed. The determination of amino acids, peptides and proteins, polyphenols, toxins, pollutants and other exogenous compounds are discussed as the Specific examples. Finally,the prospect development trend of CE-MS technology is also presented.
