摘要
介绍了高频超声波技术在食品中的应用及原理,尤其是高频超声波在食品检测、加工流程和在线监测中的应用;指出高频超声波技术需要改进的方面。
The application and principles of high-frequency ultrasound technique in food industry were introduced,especially in food detecting, processing technology and on-line monitoring.Finally,several aspects need to be improved were pointed out.
