摘要
为了有效提高白酒生产中原材料的利用率,增加出酒率,在成都市邛崃某酒厂进行了多次生产规模试验,在不改变传统酿造发酵工艺的前提下与现代生物技术相结合,在白酒生产过程中引进前培养阶段。最终使试验窖池的产酒量提高了44%,同时白酒品质也得到一定程度的提高。
To increase utilization of raw material and yield of liquor, industry-scale experiments of combination of traditional fermentation technology and modem bioengineering techniques have been taken in a distillery in Qionglai, Chengdu. In the experiment, pre-culture has been introduced in the process of fermentation without change of traditional procedure. The results showed that yield of alcohol could increase by 44% with combined technology, and quality of liquor has been improved, as well. Application of new techonolgy will bring enterprise remarkable social and economic benefits.
