摘要
对以蜗牛为主，猴头菇或田头菇为添加剂的底物用木瓜蛋白酶水解，蛋白得率最高，最佳水解条件为PH=5、温度为60℃。其样品各种氨基酸组分齐全，含硒＜0．001mg·ml(－1)，含锗＜0．02mg·ml(－1)，具有抗癌作用，对慢性胃炎和十二指肠溃疡有治疗功效。
The substrate taking snails as its chief component, hericium erinaceus and agrocybe praecox as its additives will get the highest protein rate by hydrolyzing it with papain, the best hydrolysis condition is PH= 5, 60℃. Variousamino acids of its sample possess complete constituents containing Se<0.001mg ml(-1), Ge<0. 02mg ml(-1). It has the function of anticancer and the remedial efficacyfor chronic gastritis and duodenal ulcer.
