摘要
维生素E抗氧化作用机制是它能给脂类的自由基提供一个氢,与游离的电子发生作用,抑制自由基,从而制止脂质氧化的链式反应。硒是谷胱甘肽过氧化物酶的重要成分,抗氧化作用在于转化过氧化物为相关的醇类(或水)并能清除自由基。二者在动物营养中有协同作用,但不能互相替代。本文对维生素E和硒在抗氧化的机理和相互关系上加一综述。
Vitamin E can provide one hydrogen for free radical of the lipoid, and have an effect with the .free-electron and reduce the quantity of free radical. Thus, Vitamin E prevents the fat from oxidizing. Selenium is important composition of glutathione peroxidase. Selenium can transform peroxide to relevant alcohol (or water) and can remove free radical. There are the synergism between Vitamin E and selenium in animal's nutrition, but the both can't substitute each other. This article surveys that anti-oxidant mechanism and interreaction of the vitamin E and selenium.
