摘要
研究了从柚皮中提取水溶性膳食纤维的工艺.通过温度、pH、时间、提取液用量4个单因素实验和正交实验确定了水溶性膳食纤维的最佳提取条件.实验结果表明:水溶性膳食纤维的最佳提取工艺为温度90℃、pH值2.0、时间70 min、提取液用量20 mL/g.此条件下提取率为7.35%.
The extraction of soluble dietary fiber from pomelo peel is studied in the article. The optimum soluble dietary fiber extraction process is made through four single-faetor experiments of temperature, pH, time and exracted materials and orthogonal experiments. Eperimental results show that: soluble dietary fiber for the optimum extraction temperature is 90 ℃, pH value is 2.0, time is 70 mins, and the amount of extract is 20 mL/g. Under these conditions, the extraction rate is 7.35 %.
