摘要
选取有代表性的河南烟叶在不同真空回潮条件下进行试验,研究不同加工条件下烟叶物理和感官质量的变化,结果表明:随抽空温度的增加,河南烟叶回透率逐渐增加,为保证回透率,抽空温度应在12℃以下;随蒸湿温度的提高,烟叶出口含水率升高;随破空回抽温度的增加,烟叶出口温度增加.真空回潮工序对杂气、细腻程度、刺激性、干净程度有明显改善作用,香气风格、劲头、浓度等感官质量指标变化不大,香气量随加工强度的增加呈减少趋势,干燥感呈增强趋势.
The physical and the sensory quality variation tendency of representative Henan tobacco leaf under different processing condition were investigated.The results indicated that:Along with the extraction temperature increasing,Henan tobacco has a gradual increase in penetration rate.In order to ensure penetration rate,the extraction temperature should be below 12℃;with evaporation wet temperature increasing, the tobacco leaf moisture content rate increases gradually at the vacuum conditioning exports.Vacuum damping processing can improve offensive taste,smooth tune,irritancy and cleanness of Henan tobacco. The sensory indexes such as aroma style,physiological strength and concentration improve little;volume of aroma reducing along with intension of processing,but sensory of drying increasing.
