小麦调制处理是制粉工艺中一道重要的工序,直接影响着面粉的加工精度与品质。本文论述了小麦调质处理的作用、理论并重点叙述了调质方法的研究现状。
Wheat tempering is very important in the wheat moistening process, it has great influence on the precision and quality of wheat flour. The effect and theory of wheat tempering and the research status of the special method of wheat tempering were outlined in this article.
