摘要
此文在模拟人体胃液(pH=3.0,温度为37℃)条件下,研究南姜提取液对亚硝酸钠的清除能力和对亚硝胺合成的阻断能力,并与抗坏血酸进行比较。结果表明:南姜提取液对亚硝酸钠的最大清除率可达53.12%,对亚硝胺合成的阻断率最大达42.50%。
This text is study on the ability of the scavenging sodium nitrite and disconnecting nitrosamine synthesis with south ginger extracts,under the simulated human gastric juice(pH=3.0,the temperature was 37 ℃),and was compared with ascorbic acid.The results demonstrated that the capability of scavenging sodium nitrite was 53.12%,the capability of disconnecting nitrosamine synthesis was 42.50%.
