摘要
研制苹果、胡萝卜、芹菜、大蒜复合保健饮料。以苹果、胡萝卜、芹菜、大蒜为主要原料,通过优化工艺条件、设计正交试验,筛选出最佳配方比例。获得最佳原料配方:为苹果汁、胡萝卜汁、芹菜汁、大蒜汁的最佳配方为15∶9∶1∶1。研制成的复合果蔬汁饮料,具有一定营养价值,口感独特,可用于工业化生产。
The objective of the experiment is to develop a healthy mixed beverage consists of apple,carrot,celery and garlic.Use apple carrot,celery and garlic as the main raw materials.Through optimizing the process conditions,orthogonal designed experiments,the best formula was selected.The best formula determined from the experiments is to let the ratio of apple juice,carrot juice,celery juice and garlic juice be 15∶9∶1∶1.The mixed beverage developed in the experiment is tasty as well as healthy hence is suitable for mass production for commercial purpose.
