摘要
对15岁云岭山羊(羯羊)的产肉性能及肉质进行了测定.结果显示:云岭山羊的活重、屠宰率和净肉率分别为2665kg,4361%和3191%;蛋白质中赖氨酸和组氨酸含量高于理想蛋白质中的含量;背最长肌和股二头肌肌纤维直径分别为8604μm和9784μm;肉的嫩度(剪切力kg)、熟肉率和pH24值分别为239kg,6641%和602.
The meat performance of Yunling goat at age of 18 months were
determined.The results show that living weight,dressing percentage and meat percentage are
2665 kg,4361% and 3191% respectively.The content of lysine and histidine in mutton protein are
higher than those of idea protein,The fibre diameters of Longissimus muscle and Biceps femoric
are 8604 and 9784 m respctively.The tender(shear force) is 239 kg and pH24 values is 620
