摘要
基于在酸性条件下过氧化苯甲酰氧化KI生成I2,I2与淀粉作用生成I2-淀粉蓝色化合物的特效反应,建立了测定面粉中过氧化苯甲酰的分光光度法。研究表明I2-淀粉蓝色络合物最大吸收波长为540 nm,在过氧化苯甲酰浓度为0.010—0.085 g/kg的范围内与吸光度变化呈线性关系,检出限为0.003 2 g/kg,相对标准偏差0.83%。方法具有简单,准确和灵敏度较高的优点。
A new spectrophotometry method for the determination of benzoyl peroxide in flour was studied.The principle of the method is that the reduction reaction of KI by benzoyl peroxide in the acid medium,one of the reaction product is iodine,the iodine and starch form a blue complex,then with spectrophotometer determination its absorbance in λmax is 540 nm.The linear range of the working curves is in 0.010~0.085 g/kg benzoyl peroxide,the detection limit of benzoylperoxide is 0.003 2 g/kg,the relative standard deviation is 0.83%.The method is simple accurate and sensitve.
